Mushroom Stuffed Egg Omelet



Ingredient:
2 eggs
2 cheese singles
1 green chilli chopped
1/4 cup button mushroom slice
salt as per taste
3 tbs oil

Method:
1) Take mushroom and blench it with little salt and water, strain from water and keep it aside
2) Take a bowl and beat the egg with salt, chopped green chilli.
3) Heat oil in a frying pan, put the egg on pan, spread it and let it half cook. Spread mushroom, top with cheese slice and let it cook for 2 min and then fold the omelet.

Mushroom Fry

Ingredients:
8 oz white mushroom cleaned and chop into 4 pieces
1 tbs paprika
A pinch of crushed black pepper
A pinch of black cumin seeds
A pinch of nutmeg powder
1 ½ tbs curry powder
2 tbs besan
1 tbs red chilli powder
2 tbs yogurt
½ tbs lemon juice
1 tbs oil
Salt as per taste
Oil to shallow fry

Method:
1) Mix all the ingredient except mushroom and oil to shallow fry in a bowl and marinate the mushroom pieces in the mixture for about 20-25 minutes.
2) Heat oil in a frying pan, fry the masala coated mushroom on it and your tasty Mushroom Fry is ready to eat as a snack itself or you can eat with Rice or Roti.

Aachari Mushroom

Ingredients:

Button mushrooms, 8-10, sliced
1 medium red potato cut like French fry
2 medium onions, finely chopped
5-7 green chilli chopped
¼ tbs turmeric powder
½ tbs paprika powder
¼ tbs black pepper powder
½ tbs cumin powder
2 tbs lemon juice
Salt as per taste
5-7 tbs oil

Method:
1) Take a bowl add the sliced mushroom, chopped onion, chopped green chilli, turmeric powder, paprika powder, crushed black pepper, cumin powder, salt, lemon juice, 3 tbs oil and mix it properly and leave it for 20-25 minutes.
2) Heat 4 tbs oil in a frying pan and fry the marinade mushroom and chopped potatoes for about 10-15 minutes. You may cover the lid in between and stir in between so it will get cook from all sides. 3)Aachari Mushroom is ready to serve hot with your choice of rice or roti.

Malai Mushroom

Ingredients:

Button mushrooms, 15, cut into 4 pieces
2 large onions, sliced
10 cashews
1 green chilli
2 red chilli
3 green cardamoms
3 cloves
1 inch cinnamon stick
6-8 black pepper
1 bay leaf
¼ tbs turmeric powder
1 tbs red chilli powder
½ cup yogurt
2 tbs coriander powder
1/2 tbs cumin powder
1 tbs garam masala (optional)
Salt as per taste
3 tbs fresh cream (optional)
¼ cup of oil


Method:
1) Heat 4-5 tbs oil in a frying pan and fry the sliced onions till it gets good brown color. Let it cool and grind with 2 red chilli and few tbs of water to a smooth paste.
2)Grind cashews with the green chilli into a fine paste using few spoon of water.
3)Heat 4-5 tbs of oil a deep frying pan, add green cardamoms, cloves, cinnamon,
black pepper and bay leaf. Add mushroom pieces and sauté it from 4-5 minutes.
4) Add chilli onion paste, cashews paste and mix it properly and fry.
5) Add turmeric powder, red chilli powder and yogurt and mix properly and
cook for two to three minutes.
6) Add coriander powder, cumin powder and salt and mix it properly and cook for 3 to 4 minutes.
7) Add a glass of water and stir and let it boil for about 5-7 minutes and then add fresh cream and mix it properly. Sprinkle garam masala powder and mix it and Malai Mushroom is ready to serve hot with your choice of rice or roti.

Aloo Mushroom


Ingredients
1 lb white mushroom peeled and chopped
2 potatoes peeled and chopped
2 inch ginger shredded finely
3 green chilli chopped finely
2 big onion chopped
3 cloves garlic
3 cloves
2 green cardamom
¼ tbs poppy seeds
6-7 black pepper
1 red chilli
½ tbs cumin powder
½ tbs coriander powder
4 tomatoes blenched and chopped
¼ tbs turmeric powder
Salt to taste
6 tbs oil

Directions:
1) Take half of chopped onion, red chilli, garlic, black pepper, cloves, poppy seeds, cumin powder, coriander powder and cardamom and grind to a smooth paste with few spoons of water.
2) Heat 2 tbs of oil in a frying pan and fry the chopped ginger and green chilli for few sec and then add the sliced mushroom and fry it for about 5-7 minutes till the water evaporates. Sprinkle some salt and keep it aside.
3) Heat 1 tbs of oil in a frying pan and fry (about 5 min) the potatoes till it gets half cooked and keep it aside.
4) Heat 3 tbs of oil and put remaining onion chopped and fry in low flame till it gets nice brown color and then add the grind paste and fry till the oil separates from it.
5) Add chopped tomatoes and fry for couple of minutes and then add turmeric and add 2 ½ cup of water and let it boil.
6) Add salt and then fried chopped potatoes and let stir it and let it boil for 3-4 minutes.7) Add fried mushroom, stir it and cover the lid and let it boil for about 5 minutes or until the potatoes and mushroom gets cook properly and Aloo Mushroom is ready to serve with rice or roti.

Mushroom Curry

Mushroom Curry
Ingredient:

1 ½ lb White mushroom
1 ½ cup frozen/fresh green pea
2 inch ginger (1 inch ginger shredded or cut into very small pieces)
1 medium size onions (1/3 cut into thin slices and rest chopped)
2 cloves of garlic
3 green chilli (take as per your taste)
2 medium tomatoes (chopped)
1 tbs curry powder
1 tbs meat masala
¼ tbs turmeric
¼ tbs red chilli powder
¼ tbs mustard seeds
Salt as per taste
4-5 tbs oil

Method:
This Mushroom curry is cooked in the same manner as meat curry and also taste like meat curry. This curry is enough to server about 8 people.

1) Clean the mushroom properly, peel and slice it and keep it aside.
2) Grind the chopped onion, chopped ginger, garlic, green chilli and curry powder with little water into smooth paste.
3) Grind the chopped tomatoes into a paste.
4) Heat 1 tbs of oil in a frying pan and add shredded/minced ginger pieces and when it turns golden brown add the sliced mushroom and fry it by stirring it in between, it will take about 5 minutes.
5) Add the green peas into the mushroom and fry it for another 2 minutes and then keep it aside.
6) Heat 3-4 tbs of oil in a frying pan, add mustard seeds and after it finish popping add the sliced onion and fry it till it gets golden brown, then add the masala paste and fry it in medium to low heat, keep stirring it in between to avoid this from getting burn. Keep frying for about 5 minutes.
7) Add the tomato paste, turmeric powder, red chilli powder and fry in low heat for about 5 minutes or till the masala gets fried properly and nice smell comes out of it.
8) Now add 3 cups of hot water into the pan and mix it properly and cover the lid and let it boil.
9) Add salt to the gravy and then add the fried mushroom and pea to the gravy, stir it and cover the lid and let it boil in high heat for about 2 minutes.10) Add meat masala to the curry and let it cook in medium heat for another 2-5 minutes and your Mushroom Curry is ready to serve with rice or roti of your choice.

Mushroom Kurma

Ingredient:
1 lb White mushroom
1 can chick pea (8 oz) or (you can soak ½ cup chick pea over night and boil it)
2 inch ginger (shredded or cut into very small pieces)
2 medium size onions (cut thin slices) (about 1 cup)
3 jalapenos (cut into round thin slices)
2 medium tomatoes (cut long stripes)
1 tbs curry powder
A pinch of saffron, 2-3 green cardamom, 2 long (crushed into coarse powder)
½ tbs turmeric
½ tbs cumin seeds
1 tbs lemon juice
4-5 tbs oil

Method:
1) Clean the mushroom properly, peel and slice it and keep it aside.
2) Heat oil in a frying pan and add cumin seeds and after it finish popping add the minced ginger, sliced onion, jalapenos, turmeric and sliced mushroom and fry it for about 2 minutes in medium flame or till mushroom gets soft.
3) Add tomatoes pieces, chick peas, salt, curry powder and stir it properly and cover it for a minute or two.
4) Add the crushed saffron powder, lemon juice and mix it properly, cover the lid and let it cook for a minute and Spicy Mushroom Kurma is ready to serve with Roti or rice. But it goes well with Roti

Mushroom Masala

Ingredients:
1 lb mushrooms (cleaned and chopped/sliced)
1 small can (12oz) sweet green pea
1 medium size boiled potato (optional)
2 medium chopped onion (about 1/2 cup)
2 medium chopped tomato (about 1/2 cup)
1 tsp curry powder
1 tsp ginger garlic paste
1/2 tbs red chilli powder
1/2 tbs turmeric
4-5 curry leaves
1-2 green chilli chopped
A pinch of Hing

1/2 tsp cumin
2 clove garlic
1 inch ginger piece (shredded)
1 tsp garam masala powder

4-5 tbsp oil
Salt as per taste

Method:
1. You can use chilli as per your taste, I prefer spicy so use more chillies.
2. Crush the garlic and cumin seeds if you can else just crush the garlic cloves and keep it aside.
3. Heat 3 tbs oil in a pan , add hing, add chopped onions ,little salt and fry it for a minute and when the onion is little soft add turmeric, ginger garlic paste, curry leaves, chopped green chillies, curry powder
and chopped tomatoes and cook for few min.
4. Add a glass of water and let it boil, add more salt and mushrooms and let it cook (about 5-7 minute) till mushrooms are soft and the water reduces, now add the green pea and sliced boiled potatoes and let it cook for 1-2 minutes and keep it aside.
5. Take another pan to do tadka on the Masala Mushroom. Add 1-2 tbs oil and let it heat, add crushed garlic/cumin, shredded ginger and stir for a minute add the cooked mushroom mixture and cook till the moisture evaporates and add the garam masala and it's ready to serve hot with rice or Roti of your choice.
